Do you know anyone who would dare open a restaurant in Beverly Hills just two short blocks from the most successful eatery in town? Who else but Wolfgang Puck.
This week he starts a series of preview parties to introduce CUT to the faithful who have made his Spago a favorite. CUT and its adjoining Sidebar bow officially June 9 in the Beverly Wilshire hotel. Richard Meier redesigned the hotel’s long-famous traditionally warm rooms into cool, white, open spaces with Wolfgang’s traditional open kitchen vista greeting arriving diners. And yes the hotel is only two blocks away from Puck’s Spago. How does that sit with his Spago lunch bunch regulars? For now, Puck said CUT will not be open for lunch. Asked how long a lease has he taken on the hotel space, he would only allow “As long as it is successful.” That will also determine whether he will add lunch to its menu.
The current selections boast beef from Illinois, Nebraska, and “Kobe Style” beef from Snake River Farms, Idaho. What about parking? Hotel event parking could be a problem but Wolfie has solved it. He is establishing a separate restaurant entrance and valet parking on the hotel’s western exposure, Rodeo Dr.
These new restaurants give Puck a total of 17 major restaurants, including three other hotel sites, plus take outs in major markets, where his line of foods is on the markets’ counters. There’s also his cookware line, cook books, and — personal appearances, live, television and in person at dinner time at Spago — and now at CUT as well. It’s only two blocks away. He’s the only one who could do it.
