It may still bear the Italian-accented decor of Enoteca Drago, but the brand-new Shiki is throroughly Japanese.

Behind the sushi bar is chef Shige Fujimoto, formerly of Matsuhisa and Asenebo. The dinner-only menu is sushi-intensive and based on the traditional Japanese Washoku style, which emphasizes seasonal ingredients. Both omakase (tasting menu) and a la carte ordering is available.

Eat: Homemade sesame tofu, kanpachi sashimi with sesame miso and serrano pepper, grilled Wagyu beef

Drink: Several varieties of sake — including green tea-flavored
