Spanish Food Gets a Smoky Showcase With New L.A. Restaurant

L.A. has never been strong on authentic Spanish restaurants, but that looks to change with casual wine bar Smoke.Oil.Salt. With an eye to recreating the wine-friendly seafood and meats of Spain, former TV and music exec Stephen Gelber partnered with Umami Burger’s Adam Fleischman and Valencia-born chef Perfecto Rocher to hatch the flavorful spot in the former Angeli space. Even humble spring onions get a blast of smoky soul from the fragrant wood-burning oven, while ham, cheese and pork comes directly from Spain. Rocher plans paella nights on Sundays and Mondays.

Eat: Artichoke omelet with Meyer lemon aioli, fried potatoes with Serrano ham and fried egg, smoked octopus

Drink: Spanish cava, Albarino, Tempranillo and Garnacha wines
